My old time favorite! Simple and Healthy Cooking
Ingredients:
- 2 pieces large size eggplant, grilled and peeled
- 3 garlic cloves, minced
- 1 small onion, sliced thin
- 1 tablespoon olive oil
- salt and ground pepper to taste
Simple Cooking Direction:
- Saute garlic and onion till golden brown in olive oil.
- Add grilled eggplant and stir.
- Season with a dash of salt and ground pepper.
- After few minutes remove from heat and serve.
- Best when served as a side dish w/ slices of tomato on the side.
