GINISANG AMPALAYA SA ITLOG

Simple yet healthy and filling. Just the right recipe for lent.





Ingredients:

1 lb bitter melon, julienne 

3 eggs, scrambled 

1 large tomato, diced

1 large onion, sliced thin

4 garlic cloves, sliced thin

Salt and black ground pepper to taste 

2 tablespoon cooking oil

1 cup water







Cooking Direction:

Using a pot saute onion, garlic and tomato till caramelized in cooking oil.

Add water and simmer in medium heat.

Season with salt and ground black pepper to taste.

Once it starts boiling add the slices of bitter melon.

Simmer in medium low heat till bitter melon turns lighter green.

Add beaten egg and stir.

Simmer for a minute or two then remove from heat and serve hot.
