PORK ASADO
A tasty recipe similar to the Kapangpangan Asado. It has that tart taste from the lemon and soy sauce mixture.
Ingredients:
1 lb pork shoulder, cut in 2' cubed
1/2 cup lemon juice
1/4 cup soy sauce
4 garlic cloves, minced
1 small onion, sliced thin
1 potato, cut rounds
1 small carrot, julienne
Salt and ground black pepper to taste
1/2 teaspoon achuete powder diluted in 2 tablespoon cooking oil
2 cups of water
1/2 teaspoon sugar (optional)
Cooking Direction:
Marinate pork with soy sauce and lemon juice. Refrigerate for at least 20 minutes.
Fry potatoes and carrots, set aside.
Saute garlic and onion till caramelized using the achuete/cooking oil.
Add marinated pork (set aside the marinade) and cook till pork turns golden brown.
Pour in the marinade and water. Simmer in medium low heat till pork is tender and sauce thickens.
Season with sugar, salt and ground black pepper to taste.
Top with fried potatoes and carrots.
Remove from heat and serve.
