Pancit Molo Recipe




Pancit Molo is a famous dish originated from a District in Iloilo City called Molo. It is a Filipino pork dumpling soup using wonton wrappers that is cooked in the broth of the soup.





Pancit Molo Balls Ingredients
  • 100 pieces dim sum wrapper 
  • 2 lbs. ground pork
  • 1 lb. shrimp, peeled and chopped
  • 10 cloves garlic, minced
  • 3 tbs. chopped chives
  • 3 pcs. egg, beaten
  • 2 tbs. sesame oil
  • salt and ground pepper to taste



Pancit Molo Balls Instructions
  1. Using a wide bowl, combine all above ingredients. Mix the ingredients thoroughly. Refrigerate for at least an hour before wrapping
  2. Put a teaspoon of the mixture in each wrapper and seal. Set the prepared Molo balls aside.

Soup Ingredients
  • 2 lbs. chicken breast with ribs and skin
  • 1/2 lb. small shrimp, peeled
  • 1/2 lb. ham, chopped (optional)
  • 10 cloves garlic, minced
  • 1 large onion, chopped
  • 3 celery sticks, chopped
  • 2 tbs. chopped chives or green onion
  • 4 pieces chicken bouillon
  • 2 tbs. fish sauce
  • salt and ground pepper to taste
  • 3 tbs. cooking oil
  • 1 gallon water or more





Instructions
  1. Using a wide big pot, heat in medium heat and add cooking oil. Fry garlic until golden brown and crispy. Remove fried garlic and set aside.
  2. Using the same pot, sauté onion and celery until caramelized. Add ham, stir and cook for 5 minutes. Add chicken and cook for 5 minutes until lightly brown.
  3. Add water to the pot and bring into a boil. (you can always add more water if  needed). Continue cooking for 15 minutes or until chicken is fully cooked.
  4. Once chicken is fully cooked, remove chicken from the broth and allow to cool before shredding. Return shredded chicken to the broth and continue to simmer.
  5. Season the broth with chicken bouillon, fish sauce, salt and ground pepper. Simmer in low heat for at least 30 minutes. Add more water, salt and ground pepper if needed.
  6. Add shrimp, molo ball and continue cooking until the molo balls starts to float. Once the balls floats the molo balls are cooked. Add chopped chives and continue cooking for 5 more minutes. 
  7. Remove pot from heat, transfer soup in a deep serving bowl and top with fried garlic. Serve hot and enjoy.
