Bistek (Filipino Beef Steak)

Bistek is a Filipino dish made of thin strips of beef cooked in soy sauce, calamansi or lemon juice, garlic and onions. Bistek or Bistek Tagalog is also known as Filipino Beef Steak. Bistek is a popular Filipino dish and kids favorite.

This Bistek Tagalog dish is quick, easy to make and packed with flavor. The meat is marinated with calamansi or lemon juice and soy sauce mixture for at least 30 minutes before frying. 

There are many version on how to make Bistek or Filipino beef Steak and this recipe is the easy one. Ilonggo calls this dish "Karne Prita".

Ingredients
  • 2 lbs sirloin steak, thinly sliced and pound
  • 1/3 cup calamansi or lemon juice
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 5 cloves garlic, chopped
  • 1/2 tsp ground black pepper
  • 1 tbsp brown sugar (optional)
  • salt to taste
  • 1/3 cup cooking oil
  • 1 large onion, sliced thin and round

Instructions

  1. Combine soy sauce, water, calamansi or lemon juice, chopped garlic, pepper and sugar in a bowl. Stir well to combine. Set aside. 
  2. Cut beef into thin strips and pound using a meat tenderizer. 
  3. Add slices of beef to the citrus-soy sauce mixture and stir to combine. Let it marinade for 30 minutes to an hour. 
  4. Separate beef from the marinade. Set aside remaining marinade. 
  5. Heat wok in medium-high heat and add cooking oil. 
  6. Quick fry slices of onion until translucent. Remove onion from the wok and set aside. 
  7. Using the same wok, pan fry beef until it turns brown in batches. Remove beef and set aside. 
  8. Pour in marinade into the wok and bring to a boil. Reduce heat and simmer sauce for few minutes. 
  9. Return beef to the wok and continue to simmer until beef is tender and sauce starts to thickens. Add more water if needed. 
  10. Taste test and adjust the sauce with more soy sauce or calamansi juice or salt to suit your taste. 
  11. Transfer beef and sauce in a serving plate and serve hot with rice. Enjoy! Leftover can be served for breakfast as "BeefSilog".
