Chop Suey Filipino-Style
Chop Suey is an easy stir-fry vegetable dish. It was said that this dish was introduced to Filipinos by the Chinese but is actually an Americanized-Asian dish, but one thing I know for sure, this simple dish is so delicious and a good source of many vitamins.
This Chop Suey Filipino-style is made with assorted and colorful vegetables commonly used by Filipinos like carrots, baby corn, bell peppers and snow peas.
With this recipe, I used chicken and shrimp, but you can substitute it with pork, beef or mixed and add more seafood and vegetables. It is easy to prepare and can be made using whatever meat and vegetables you have on hand.

Ingredients
- 3 tbsp. olive oil
- 1 thumb size ginger, grated
- 4 cloves of garlic, chopped
- 1 medium onion, sliced
- 1 lb boneless chicken, sliced
- 1/2 tsp ground pepper
- 1 tbsp. soy sauce
- 1 tbsp. oyster sauce
- 1 Knorr chicken cube
- 1/2 lb shrimp, peeled and deveined
- 1 large carrot, sliced thin
- 3 celery stick, sliced
- 1 can baby corn, drained
- 1 large zucchini
- 1 small green bell pepper
- 1 small red bell pepper
- 1 cup water or chicken broth
- salt to taste
- 1 tsp cornstarch diluted in 2 tbsp. water
- 1/2 lb snow peas, ends removed
- 1 small cabbage, chopped
Instructions
- In a wide pan, heat and add olive oil. Saute ginger, onion and garlic for a minute until aromatic.
- Add chicken and stir. Cook until chicken is fully cooked and light brown. Season with ground pepper, soy sauce and oyster sauce. Add chicken cube and stir.
- Add shrimp, and carrots. Stir and cook for a minute.
- Stir in celery, baby corn, zucchini and bell peppers.
- Add water and season with salt to taste. Bring into a quick boil.
- Add cornstarch diluted in water and cook a minute until sauce starts to thickens.
- Add snow peas and cabbage. Stir gently and cook for a minute.
- Turn off the heat and transfer in a serving dish. Serve hot with steamed rice and Enjoy!
