Ginataang Gulay
Ginataang Gulay is a delicious and flavorful combination of vegetables cooked in coconut milk. What I like about this Filipino vegetable dish is you can use any vegetables in your pantry. Ginataang Gulay is so easy to make and one of the simplest Filipino vegetable dish.
This dish is usually prepared with different kind of vegetables like squash, beans and okra but with this recipe I added what I have in my fridge and it worked really well. You can also add pork to this recipe and even chicken.

This Ginataang Gulay is a quick and easy recipe usually prepared with different kinds of vegetables. It can be made in a little under 30 minutes. The coconut milk and the combination of kalabasa, talong at ampalaya is an awesome combination.

Ingredients
- 2 tbsp. cooking oil
- 1 thumb size ginger, grated
- 1 small onion, chopped
- 3 cloves of garlic, chopped
- 1 tbsp. sautéed bagoong
- 1 lb. shrimp, peeled and deveined
- 1 small kalabasa, cut into cubes
- 1 large talong, cut into bite size
- 1 large ampalaya (cut into bite size)
- 1/2 cup water
- 1 cup coconut milk
- salt to taste
Instructions
- In a wide pan, heat and add cooking oil. Sauté ginger, garlic and onion until aromatic. Add sautéed bagoong and stir. Cook for a minute.
- Add shrimp and stir. Cook for a minute until shrimp turns pink.
- Add kalabasa and talong. Stir gently and cook for few minutes.
- Add ampalaya and allow to cook for a minute without stirring.
- Pour-in water and coconut milk. Bring to a boil for 2 minutes. Season with salt to taste.
- Cover pan and reduce heat to simmer for about 10-15 minutes until all vegetables are fully cooked.
- Transfer in a serving dish and serve with steamed rice and fried fish. Enjoy!
