Tokwa't Baboy

Ingredients
  • 1 lb pork belly
  • 1 12 oz extra firm tofu
  • 1 tsp whole peppercorn
  • 2 bay leaves
  • 3/4 cup pork broth (from boiling the pork belly)
  • 1/2 cup vinegar
  • 1-2 tbsp soy sauce
  • 1 large onion, chopped
  • 1-2 hot chili pepper, sliced thin
  • 1/2 tsp ground black pepper
  • 1 tsp brown sugar
  • salt to taste
  • 1/2 cup chopped green onions
  • water for boiling the pork
  • oil for frying the tofu



Instructions
  1. Boil pork belly with peppercorn and bay leaves in 4 cups of water until tender. Allow to cool and slice into bite size pieces. Set aside. 
  2. In a pan, heat and add cooking oil. Pat dry the tofu and fry until golden brown. Cut into cubes and set aside. 
  3. For the sauce; combine pork broth, vinegar, soy sauce, ground pepper, sugar and salt to taste. Bring into a quick boil and reduce heat to the lowest and simmer. 
  4. In a wide bowl, combine boiled pork, fried tofu, onions, chili peppers, green onions and pour-in the hot sauce. Stir gently to combine all ingredients and let it sit for at least 30 minutes before serving while stirring occasionally. Enjoy!
