Paksiw na Pata

INGREDIENTS
  • 1 tbsp cooking oil
  • 2 lbs pork hock (pata)
  • 6 cloves of garlic, sliced
  • 1 medium onion, sliced
  • 2 bay leaves
  • 1 tsp peppercorns
  • 1/2 cup vinegar
  • 2 tbsp brown sugar (use 3 tbsp brown sugar if you want it sweeter)
  • 1/4 cup soy sauce
  • salt to taste
  • 1/2 cup banana blossoms (soaked in warm water for an hour and rinsed well)
  • water

INSTRUCTIONS
  1. In a deep pan, heat and add cooking oil. Add pork hock and cook until brown. Remove and set aside. 
  2. Using the same pan, saute garlic and onion for about a minute or until aromatic. Add browned pork hock to the pan. Pour in enough water to cover the meat and bring into a boil. Skim off the scum and fat that accumulate on the surface. Cover pan and reduce heat to simmer for about 30 minutes or until meat is tender. Add more water if needed. 
  3. Add bay leaves, peppercorns and vinegar. Simmer for few minutes before stirring. Add brown sugar and soy sauce. Simmer for 5 minutes. Taste to see if salt is needed and add accordingly. Add more brown or white sugar if you want it more sweeter. Add banana blossoms and stir gently. Simmer for 15 minutes or until sauce starts to thicken. Serve with steamed rice and enjoy!
