How to make Lumpiang Togue





Lumpiang Togue also known as Mung Bean Sprouts Spring Rolls is a delicious fried Filipino lumpia. This lumpia recipe is filled with togue or bean sprouts and basic vegetables then fried until golden brown and crisp.

Lumpiang Togue is easy to make and best when served with spiced vinegar for snack / merienda or appetizer. Try this easy recipe and share with family and friends.

Ingredients

  • 1 tbsp cooking oil
  • 1 medium onion, chopped
  • 5 cloves of garlic, chopped
  • 1/2 lb ground pork
  • 1/4 lb shrimp, chopped
  • 2 cups togue (bean sprouts), rinsed and drained well
  • 1 carrot, shredded
  • 2 cups chopped cabbage
  • 1/2 tsp salt or to taste
  • 1/2 tbsp sugar
  • 1/2 tsp ground pepper
  • small lumpia wrappers 
  • cooking oil for frying





Instructions

FOR FILLING: 
  1. Heat oil in a wide pan. Saute onion and garlic for a minute or until aromatic. Add ground pork and allow to cook pork until brown. Add shrimp and cook for few minutes. Add togue or bean sprouts and stir well. 
  2. Pour-in water and cook over medium-low heat until meat is cooked and bean sprouts is tender. Season with salt, sugar and ground pepper. Cook for few minutes stirring occasionally. Add carrots and cabbage. Cook for a minute and drain excess liquid. Allow to cook and set aside. 
WRAPPING:
  1. Arrange wrapper in a flat surface. Place 1 heaping teaspoon of filling on the wrapper. Roll wrapper tightly and fold sides. Seal the wrapper with water or egg wash and set aside. Repeat with the remaining wrappers and filling. Set aside. (watch the short video above to visually guide you on how to wrap)
FRYING:
  1. Heat enough cooking oil in a deep pan. Fry lumpiang togue by batches until golden brown and crisp over medium low heat. Remove fried lumpia and drain excess oil. Serve hot with your favorite dipping sauce or spiced vinegar. Enjoy!
