Biko with Latik Recipe


Here is my sister in-law (Cynthia) version on how to cook a delicious Biko with Latik or Bibingkang Malagkit, also known in Ilonggo as suman. Biko with Latik is made from glutinous rice, coconut milk and brown sugar. Biko with Latik is a popular Filipino snack or merienda that is often served during parties and holidays.

Ingredients

  • 4 cups glutinous (malagkit) rice
  • water
  • 8 cups coconut milk
  • 3 cups of brown sugar (4 cups if you prefer it sweeter)


Instructions
  1. Rinse glutinous rice in water and drain. Add 3 cups of water to the rice and cook over medium heat. Once it starts to boil, reduce heat to low and continue to cook rice until rice is done. Stir and add more water as needed. Set aside. 
  2. Place coconut milk in a wide pan and bring into a boil while stirring occasionally. Once it starts to boil, lower heat and continue to stir until oil starts to separate and solids begin to form. Continue to stir until curds (latik) turn golden brown. Remove brown curds (latik) from oil and set aside for topping. Save coconut oil. 
  3. Combine cooked rice to coconut oil and stir until evenly distributed. Add brown sugar to the pan and stir. Continue cooking while stirring over low heat until sugar melts and evenly distributed to the rice. Cook until mixture is very thick and sticky. 
  4. Transfer cooked biko to a serving plate and top generously with latik. Serve hot, warm or cold and enjoy!
