Palitaw

 

Palitaw is one of the Filipinos favorite mid-afternoon snack, my favorite Filipino treat. It is a small flat rice cake cooked in boiling water, coated with grated coconut and and served with a mixture of sugar and sesame seeds. Palitaw is made with glutinous (malagkit) rice dough, grated coconut, water and sugar. The glutinous rice flour is mixed in water, rolled into balls and boiled until soft and chewy. 


Palitaw literally means "to float" and it is given that name because of the way it is cooked. The rice dough is dropped in boiling water and when it rises to the surface, it is fully cooked. Cooking Palitaw is very easy make using simple ingredients which are glutinous rice flour, grated coconut, sugar and sesame seeds. Kakanin is a popular Filipino kakanin you can easily make at home. Feel free to use white or light brown sugar. I like using light brown sugar when making Palitaw. Watch the video below and learn how easy to make a delicious Palitaw.

INGREDIENTS
  • 1.5 to 2 tbsp sesame seeds
  • 1/4 cup white or light brown sugar
  • 1 cup glutinous (malagkit) rice flour
  • 1/2 cup water
  • 1/2 cup grated coconut or dessicated coconut


INSTRUCTIONS
  1. Heat a small pan over medium heat and add sesame seeds. Toast sesame seeds until golden brown stirring frequently. Remove pan from heat and allow to cool completely. 
  2. In a small bowl, combine sugar and toasted sesame seeds. Stir to combine and set aside. 
  3. In a medium bowl, combine glutinous rice flour and water. Mix until thick and sticky mixture forms. Divide mixture into 8 and roll into small balls. Flatten dough using the palm of your hand nd set aside. 
  4. Bring enough water into a boil. Drop rice patties into the boiling water one at a time, making sure not to over crowd. Cook for about 2 to 3 minutes until patties floats to the top of the water. Remove patties using a slotted spoon and allow to cool slightly. 
  5. While still warm, roll Palitaw in grated coconut, arrange in a serving plate and sprinkle with sesame-sugar mixture before serving. Enjoy!
