INGREDIENTS
- 2 large tomatoes, chopped
- 1 medium onion, chopped
- 1 thumb size ginger, sliced
- 1 bunch cilantro or green onions, chopped
- 1/4 tsp ground pepper
- 1 tbsp fish sauce or salt to taste
- 1-2 lbs tilapia, cleaned and pat dry
- 1 tbsp tamarind soup mix (sinigang powder)
- banana leaves for wrapping
- aluminum foil for wrapping
- cooking oil spray or melted butter
INSTRUCTIONS
- In a bowl, combine tomatoes, onion, ginger, cilantro, ground pepper and fish sauce. Mix to combine and set aside. Clean banana leaves and wipe dry. Set aside.
- Sprinkle tilapia with tamarind powder and rub all over the fish including the cavity. Stuff tilapia with tomato-onion mixture. Arrange banana leaves over aluminum foil. (Double wrapping with aluminum foil prevents the juice from leaking) Spray or brush banana leaves with cooking spray or melted butter. Add stuffed fish and spray or brush fish with oil or butter. Wrap the fish in banana leaves then the aluminum foil and fold the edges to seal.
- Preheat oven to 375 F. Place wrapped fish in a baking pan and bake in preheated oven for about 20-25 minutes or until fish is cooked well. Remove fish from the oven and allow to cool for 5 minutes. Adjust the oven temperature to low broil. Gently open the foil and the banana leaves. Spray or brush tilapia again with oil or melted butter. Return to the oven to broil for about 5 to 10 minutes or until lightly browned. Serve while hot with spiced vinegar or fish sauce and hot steamed rice. Enjoy!
