 How to make Papaya Atchara. A simple Atchara recipe that is also ideal for business. 


Filipinos loves Atchara, I guess reason why there are many versions on how to make pickled vegetables. One of my favorite is this green Papaya Atchara recipe. Atchara is one of the Filipinos favorite condiment and often paired with grilled or fried meat like pork belly, barbecue on a stick, lechon and fish. Atchara is also known as Achara or Atsara. 


Although the main ingredient of Atchara is the shredded green papaya, it is also made with carrots, onions, bell peppers, ginger and garlic. I also like making Papaya Atchara with Ampalaya or bitter melon. Atchara texture is often crispy over sweet-tart brine enhanced with garlic, ginger, peppercorns and a hint of turmeric powder.

Ingredients

  • 4-5 cups grated green papaya
  • 2 teaspoon salt
  • 1/2 cup water
  • 1 medium carrot, grated
  • 1 medium onion, sliced thin
  • 1 small red bell pepper, sliced thin
  • 1/3 cup raisins
  • 2 thumb size ginger, sliced thin
  • 5 cloves of garlic, sliced thin
Brine Ingredients
  • 2 cups vinegar
  • 1/3 cup sugar
  • 1 tablespoon peppercorn
  • 1/6 teaspoon turmeric powder

Instructions
  1. In a small pot, combine vinegar and sugar. Stir well until sugar is dissolved. Add peppercorns and bring into a quick boil while stirring occasionally. Turn off the heat and add turmeric powder. Stir well to dissolve turmeric powder. Set aside and allow to cool. 
  2. Toss grated papaya with salt and water. Toss well and squeeze to remove excess liquid or place papaya in a cheesecloth and squeeze firmly to remove excess moisture.
  3. In a bowl, combine papaya, carrots, onions, bell peppers, raisins, ginger and garlic. Toss well to combine. Add pickling solution and gently toss again to combine. 
  4. Transfer the papaya atchara mixture into a sterilized jar or air tight container. Refrigerate and allow 1 to 2 days before serving. You can store this Papaya Atchara or Pickled Papaya in the refrigerator up to 4 to 6 months. Enjoy!
