Pork Hock with Beans

This Pork Hocks or Pork Pata recipe is super tender and melts in your mouth with an amazing flavor. This Pork Hocks or Pork Pata is my own recipe inspired from my famous Filipino-style Callos, a hearty dish made of beef tripe and Chinese sausage.

Ingredients

  • 2 Chinese sausage
  • 2-3 lbs pork hock (pata)
  • water as needed
  • 3 pieces bay leaves
  • 2 tablespoon cooking oil
  • ground pepper
  • salt as needed
  • 1-2 tablespoon brown sugar or to taste
  • 1/2 teaspoon paprika
  • 8 ounces tomato sauce
  • 15 ounces pork and beans
  • 1 small onion
  • 3 cloves garlic
  • 1 small red bell pepper
  • 1 small green bell pepper
  • 1/2 cup sweet peas



Instructions

  1. Using a semi-deep pot, heat over medium heat and add cooking oil.
  2. Add Chinese sausage and cook for about a minute. Set aside.
  3. Add pork (pata) hock and sear until browned. Set aside. 
  4. Add onion and garlic. Cook until fragrant for about a minute. 
  5. Return pork hock to the pot. Add bay leaves, 1/2 teaspoon ground pepper and enough water to cover the pork. Cover pot and bring into a boil. Once it starts to boil, reduce heat to simmer until pork is tender. Remove scum that float. Add more water as needed.
  6. If using a pressure cooker or a insta-pot, cook for 30-40 minutes.
  7. Add paprika, a teaspoon salt and tomato sauce. Gently stir and continue to cook for 10 minutes or sauce start to thicken.
  8. Add brown sugar and ground pepper as needed. Gently stir to combine. 
  9. Add Chinese sausage and pork and beans. Gently stir to combine. Cook for about 5 minutes. 
  10. Add bell peppers and sweet peas. Gently stir to combine. Cook for a minute.
  11. Remove from heat and serve hot. Enjoy!
